Best Texas Hold'em has lots of tables to choose from. If you're a beginner, you can just click the Find Me a Seat button and you will be assigned to a table appropriate for your level. Otherwise you can select your own table. Tables vary in the following ways:

Limit type
Some tables are Limit poker, some are Pot Limit and some are No Limit. You can read about limit types here.
Maximum and minimum buy-in
The high-stakes tables will have high minimum and maximum buy-in amounts. At beginner tables, they will be lower.
Blinds
High stakes tables have higher blinds than beginner tables. This also affects the minimum bets.
Number of seats
Some tables allow up to eight players to join. Others are smaller.
